Fish Lasagne

(Serves 4)

Ingredients:

Fish Lasagne
  • 225g coley or cod fillet
  • 225g smoked cod, haddock or whiting fillet
  • 15ml oil
  • 1 small onion, finely chopped
  • 397g jar of pasta sauce
  • 6 sheets of lasagne verde
  • 1 egg, beaten
  • 115 cottage cheese
  • 150ml plain fromage frais or natural yoghurt
  • 55g cheese, grated
  • pepper to season

Method:

  1. Preheat the oven to 190ºC, gas mark 5.
  2. Heat the oil in a large pan and cook the onion until soft. Add the courgettes, pasta sauce and seasoning. Bring to the boil, remove from the heat and add fish.
  3. Cover the base of the ovenproof dish with a layer of lasagne sheets. Top with half the fish mixture. Repeat the layers, finishing with the lasagne sheets
  4. To make the topping: mix together the egg, cottage cheese and fromage frais or yoghurt.
