Fish Stuffed Peppers

Serves 6

Ingredients:

Fish stuffed peppers
  • 455g (1 lb) Skinless and Boneless Cod or Haddock cut into Cubes
  • 4 Large Peppers
  • 60g (2 oz) Cooked Long Grain Rice
  • · 1 x 5ml Spoon (1 teaspoon) Dijon Mustard
  • 60g (2 oz) Grated Cheese
  • 150g (5 and a half oz) Sliced Mushrooms
  • Fresh Chopped Parsley, to Garnish

Sauce:

  • 150g (5 and a half oz) Crème Fraîche
  • 50ml (2 fl oz) White Wine or 1 x 270g Jar White Wine Sauce
  • Salt and Black pepper

Method:

  1. Slice the top off the peppers - reserve; remove seeds and core; cook on HIGH for 6 minutes.
  2. Mix together in a bowl, the rice, mustard, half of the cheese, mushrooms and the sauce ingredients or the jar of sauce. Stir in the fish.
  3. Stuff the pepper with the fish mixture, sprinkle the remaining cheese on the top and replace lid. Place in an Microwaveable dish and cook on HIGH for 6 minutes (800 Watt).
  4. Garnish and serve as a starter.
