Grilled Fish Tacos

Serves 4-6

Ingredients:

Grilled Fish Tacos
  • 907g of any firm white fish cut in 1” strips
  • 12 corn tortillas
  • 59ml mayonnaise
  • 30ml tomato ketchup
  • 59ml sour cream
  • 355ml shredded red cabbage
  • 2 large tomatoes, chopped
  • 2 limes, cut in wedges
  • prepared salsa or hot sauce

Method:

  1. Dip a paper towel in olive oil and, using tongs, brush over clean grill. Grill the fish over medium heat, 2-3 minutes on each side.
  2. While fish is grilling, spray tortillas with a little water and set them on the grill to warm, turning frequently. Continue warming, 2 at a time, remove from grill and stack.
  3. Mix together sauce ingredients. When fish is done, place 2 strips in each tortilla, top with shredded cabbage, chopped tomatoes and a spoonful of sauce.
  4. Serve with lime wedges and salsa.
