Grilled Fish Tacos
Serves 4-6
Ingredients:
- 907g of any firm white fish cut in 1” strips
- 12 corn tortillas
- 59ml mayonnaise
- 30ml tomato ketchup
- 59ml sour cream
- 355ml shredded red cabbage
- 2 large tomatoes, chopped
- 2 limes, cut in wedges
- prepared salsa or hot sauce
Method:
- Dip a paper towel in olive oil and, using tongs, brush over clean grill. Grill the fish over medium heat, 2-3 minutes on each side.
- While fish is grilling, spray tortillas with a little water and set them on the grill to warm, turning frequently. Continue warming, 2 at a time, remove from grill and stack.
- Mix together sauce ingredients. When fish is done, place 2 strips in each tortilla, top with shredded cabbage, chopped tomatoes and a spoonful of sauce.
- Serve with lime wedges and salsa.
