Mediterranean Topped Cod

(Serves 4)

Ingredients:

Mediterranean Topped Cod
  • 4 x 175 cod fillets skinned
  • 15ml olive oil
  • 1 small onion, chopped
  • 1 red pepper, chopped
  • 225g tin chopped tomatoes
  • 75g black olives, chopped
  • 15ml Spicy Italian Pasta Sauce Seasoning (Schwartz)
  • 5ml sugar

Method:

  1. Heat the oil and fry the onion and pepper until soft. Add the tomatoes, olives, Spicy Italian Seasoning and sugar and simmer for 15 minutes, until thickened and reduced.
  2. Place the cod on the grill and spoon the tomato mixture evenly over the fillets. Grill for 20- 25 minutes or until cooked through.
  3. Serve on a bed of roasted vegetables.
