Mediterranean Topped Cod
(Serves 4)
Ingredients:
- 4 x 175 cod fillets skinned
- 15ml olive oil
- 1 small onion, chopped
- 1 red pepper, chopped
- 225g tin chopped tomatoes
- 75g black olives, chopped
- 15ml Spicy Italian Pasta Sauce Seasoning (Schwartz)
- 5ml sugar
Method:
- Heat the oil and fry the onion and pepper until soft. Add the tomatoes, olives, Spicy Italian Seasoning and sugar and simmer for 15 minutes, until thickened and reduced.
- Place the cod on the grill and spoon the tomato mixture evenly over the fillets. Grill for 20- 25 minutes or until cooked through.
- Serve on a bed of roasted vegetables.
