Starfish Salmon Shapes

Suitable for 18+ months (Makes 8 portions)

Ingredients:

Starfish Salmon
  • 500g cold mashed potatoes
  • 2 tbsp tomato ketchup
  • 1 tsp Worcestershire sauce
  • 1 lightly beaten egg
  • 2tbsp chopped chives
  • 375g cooked and flaked salmon fillets
  • 3 tbsp breadcrumbs, plus extra for coating

Method:

  1. Mash the potatoes with the tomato ketchup, Worcestershire sauce, beaten egg and chives.
  2. Mix in the salmon and 3 tablespoon of breadcrumbs. Shape the mixture into rissoles.
  3. Use a large star-shaped biscuit cutter to cut eight starfish shapes
  4. Gently pull out the points of the stars.
  5. Coat with breadcrumbs and brush with melted butter.
  6. Set the fishcakes on lightly greased baking sheet. Transfer to the preheated oven and cook for 4 minutes on each side.
