Steamed Cod Cutlets with Ginger & Chilli

(Serves 4)

Ingredients:

Steamed Cod Cutlets with Ginger & Chilli
  • 4x175g firm cod cutlets
  • 5cm piece of fresh ginger, shredded
  • 2 garlic cloves chopped
  • 2 tsp chopped red chillies
  • 2 tbsp chopped coriander stalks
  • 3 spring onions, cut into fine short threads
  • 2 tbsp of lime juice

Method:

  1. Line a bamboo steamer basket with banana leaves or baking paper to prevent the fish sticking to the base.
  2. Arrange the fish in the steamer and top with the ginger, garlic, chilli and coriander stalks.
  3. Cover and steam over a wok or a pan of boiling water for 8-10 minutes, or until fish flakes easily.
  4. Sprinkle the spring onion and lime juice over the fish, cover and steam for an extra 30 seconds.
  5. Served with rice.
